The Cascade Syrup

The Cascade is a small-batch cascara and lemon syrup made in Portland, Oregon from upcycled coffee fruit. Cascara — the dried skin of the coffee cherry — has a flavor profile all its own: tart cherry, rosehip, brown sugar, and a hint of cola. It tastes nothing like coffee.

Mix it with sparkling water for a 30-second café-style refresher, use it as a cocktail mixer with gin or rum, or stir it into espresso for a cascara latte. It works in all of them.
