After looking at many avenues, Gavin chose to create a beverage from coffee cherry cascara, naming it The Cascade for its blend of cascara and lemon, and as a nod to his Pacific Northwest roots.

34 years after his father starts in the coffee industry trying to solve for how coffee growers could find more value with their coffee plants, Gavin Griswold decided to figure out ways that farmers could find additional sources of income. In search of this answer, his journey took him to three different continents into the tropical forests across the world.

Guatemala/Portland

Now selling green coffee from Fair Trade and Organic cooperatives, David made sure his son Gavin got to see where the delicious coffees came from, not only to be introduced to different cultures, but to respect the rigorous processing of cultivating and producing coffee at the farm

Mexico City

Just after the Berlin Wall fell, coffee prices went with it as the international agreements collapsed with the cinderblock in Germany. In Mexico, a young David Griswold was working with a nonprofit trying to help farmers sell their beans in a new economy. Answering these questions answers what he will do for the next 30 years.
